How to make perfect curd / yogurt- 


In India , everywhere curd is used. In every house we make curd. But sometimes it is very sweet sometimes it is very sour or sometimes it tastes not so good . There are a few tips on curd making you can get that sweet and same taste every time-



  1. while making curd never use too hot milk .
  2. use appropriate amount of curd for making curd.
  3. try to use an earthen pot for making curd.
  4. place the milk ,while making curd  in a warm place not in cold place but if weather is cold then you can cover the pot with a  warm cloth.
  5. you can also use a hot case for making curd.

Ingredients-
milk - 1 l litre
curd - 1 teaspoon

Method-
start with heating the milk. Temperature of milk should not be very high.It should be warm .Now add 1 tsp of curd then whisk properly to mix the curd in the milk. cover it and keep on a warm place for 4-5 hours undisturbed .that is how perfect curd is obtained . if you are using a hot case( hot chapati box) you have no need to keep it on a warm place.
when you get the curd keep it in refrigerator and use for making chach (lassi) , hung curd raita etc.

How to make paneer at home-  

                                                        Friends, these days it is festive season in india and every Indian is fond of paneer.
We will make paneer at home with such ingredients those are easily available at home like milk, lemon juice or citric acid or you can also use vinegar or sour curd .There are many options. I have used one of these similarly you can make with other ones. The secret is only one that you have to add sour material (lemon curd etc) slowly little by little and as you see the curdling has started switch off the gas or heat and keep stirring it will seprate the curd and the whey easily. Friends, I am not so good at language but my purpose is to make others cook easily so that is resolved here so please do not consider my mistakes here .

Ingredients-

Milk – 2 litre( you can take less or more)
Citric acid – 1 tsp
    Or
Lemon juice 2-3 tbsp
     Or
Vinegar 2-3 tbsp
    Or
Curd- one cup

Method-


Boil the milk .Switch of the heat. Then add citric acid or lemon juice whatever you want. Just add little by little.  Here I used citric acid. You can see the pics. Step by step demonstration is given. Now you can separate curd and whey by using a colander and a cotton cloth. Place the cloth in the colander and sieve the curd. Now this is your soft paneer. For making bhurji( scrambled paneer ) you can use it , as it is now but for giving it a shape tie it in the same cloth and hang it anywhere. Then  water will remove and  you will get a big piece of paneer . now cut it in pieces and use it.
