Grated carrots - 1/2 kg.
Sugar - 1 & 1/2 cup
Desi Ghee
(clarified butter )- 4 tbsp
Kaju (in halves)- 10 -12
Fresh cardomam powder crushed -1/2 tsp
Coconut powder - 75 gm or 1 cup
Milk powder - 150 gm
Whole milk - 2 cups
Method:-
- Boil milk in a pan and add carrots to it.
- Let them be soft, cook on high flame.
- When mixture becomes dry then add ghee and saute it.
- Add sugar to this mixture now it will become of liquid consistency Add coconut powder and milk powder to this mixture.
- Cook until the mixture becomes dry.
- It should come to barfi consistency then pour the mixture in greased tray and decorate the cashews.
- Let it set in fridge for two hours.
- Cut the pieces and enjoy your barfi .
